Conditions like water temperature, farming method, and season all factor into an oyster's flavor, so it nearly goes without saying that the variance among even local oysters can be vast!

In this class, we take a deep dive into learning about all the factors that can contribute to the nuances in an oyster's flavor, and sample a selection of oysters from up and down the Eastern Seaboard.
